When animal bones are simmered over an extended period with water and a mild acid such as apple cider vinegar the connective tissue, cartilage, and bone matrix release a concentrated range of bioactive compounds.
These include collagen peptides and their constituent amino acids—glycine, proline, and hydroxyproline alongside glutamine, gelatine, glucosamine, chondroitin sulphate, and trace minerals including calcium, magnesium, and phosphorus.
